An outbreak of staphylococcal food poisoning in the Municipality of Passos, MG, Brazil BABT

An outbreak of staphylococcal food poisoning involving 42 people who had eaten a meal at a restaurant in the Municipality of Passos, Minas Gerais, Brazil, is reported. Thirty-one of the individuals became ill with vomiting, diarrhea and dizziness within 30 minutes after eating the meal. The foods suspected were: chicken pancake, rice, beans, tomato sauce and mashed chick-peas. Large numbers (> 2.0x10(8) CFU/g) of enterotoxigenic staphylococci were present in the chicken pancake. These strains produced enterotoxins A, B and D. Swabs from the nasal cavity and throat and from under the fingernails of food handlers were cultured for the detection of enterotoxigenic staphylococci carriers. Staphylococcal food poisoning is one of the most frequent foodborne illnesses worldwide and it is caused by the ingestion of food contaminated with enterotoxins produced by some strains of Staphylococcus (S.) aureus. In the State of Rio Grande do Sul (RS), Southern Brazil, S. aureus has been identified as the second most frequent agent of foodborne illnesses in the last two decades. The aim of the present study was to assess and analyse the epidemiological data of S. aureus food poisoning occurred in the State of RS during the years of 2000 to 2002. Numerous cases of food poisoning were observed in South Normandy during the summer 1983 and attributed to shellfish consumption. At the same time a dinoflagellate Dinophysis acuminata was found in the Bay of Seine and in north Normandy where high concentrations induced "red waters". The observation of the stomach contents of the mussels showed that this Dinophysis was one of the main constituents of the alimentary bolus. The toxicity of type DSP, determined by the mouse-test, is more or less correlated with the abundance coefficient of D. acuminata . Its space distribution also seems connected to the tidal movements.

Following exceptional outbreak of toxic dinoflagellate species in Vilaine Bay (summer 1983) a survey was carried out: variations in phytoplankton abundance and distribution in water and in mussel guts were followed. In the same time toxicity studies using mouse-test were performed with contaminated shellfishes, and mouse-test calibration was attempted. In spite of sampling and analysis conditions could be open to criticism, results obviously showed relation between shellfishes toxicity and occurrence of responsible species: Dinophysis acuminata.

Occurrence of food poisoning related to Salmonella-contaminated eggs and chicken meat has been frequent in humans. Salmonella Enteritidis (SE) and Salmonella Typhimurium (ST) are included among the most important paratyphoid salmonellae associated with chicken meat and eggs. Elimination of Salmonella at the pre-harvest stage can play a significant role in preventing the introduction of this pathogen into the food chain and consequently in the reduction of food poisoning in humans. Bactericidal bacteriophages may provide a natural, nontoxic, feasible and non-expensive component of the multi-factorial approach for a pre-harvest control of Salmonella in poultry. The production of Toxic Shock Syndrome Toxin-1 (TSST-1), enterotoxins and bacteriocin-like substances was evaluated in 95 strains of Staphylococcus aureus recovered from raw bovine milk (n=31) and from food samples involved in staphylococcal food poisoning (n=64). Enterotoxigenicity tests with the membrane over agar associated to optimal sensibility plate assays were performed and showed that 96.77% of strains recovered from milk and 95.31% from food samples produced enterotoxins A, B, C, D or TSST-1.
